In Puglia la focaccia come la conosciamo oggi nasce probabilmente come variante del tradizionale pane nelle zone di Altamura o Laterza, in particolare era proprio quel prodotto che si metteva a cuocere quando il forno si stava scaldando per la cottura del pane ma ancora non aveva raggiunto alte temperature (la focaccia richiede sempre meno calore).
