Le orecchiette oggi sono un tipo di pasta tipico delle regioni Puglia e Basilicata, la cui forma è approssimativamente quella di piccole orecchie, da cui deriva appunto il nome.
Le origini sono da ricercarsi in Puglia e Basilicata, dove fin dal lontano Medioevo si produceva una pasta simile utilizzando il grano duro del Tavoliere. Si trattava di una pasta molto spessa e a forma di dischi, incavata al centro mediante la pressione del dito pollice.
